Juan Francisco Pira is an absolute perfectionist. You can be assured that anything he touches will be given his best effort, hands down. It should come as no surprise that he has his hands in farming, wet milling, dry milling, and exporting. He even has his farm irrigated by the nearby Lake Atitlán, a pristine body of water renowned as one of the most beautiful lakes in the world. 

Pira's farms are close to the mill, which helps to preserve coffee quality through a shortened transit time. At the mill, he has a quality control lab and cupping room, and he recycles processing water which minimizes his overall water consumption. His farm is also shaded by macadamia nut trees, helping to diversify the farm's income while allowing both crops to benefit from their proximity to one other.

This rich, decadent coffee offers taste notes of baked peach, fudge, and caramel. Absolutely delicious in any preparation.  

About Density Separations:

Density grading (sometimes called dry milling), simply put, is the process of separating the heaviest beans from the lighter beans. The denser the coffee bean, the higher the quality. With dry milling, we run a density separation on what is already high-end specialty grade coffee. We run our separations twice, and in doing so, we separate out the very best of the best beans to roast.

Why do we do it?  It was our love for coffee-- and our intense drive to taste it in its absolute perfection-- that led us to the idea of density separating high-end specialty coffee. Imagine a roast of an already incredible coffee where each bean is a "10". The luxury of the absolute best is what we have on offer here.
