Minas Gerais region, Brazil
Pulped Natural Process Yellow Bourbon Varietal
$22
Adolfo Henrique Vieira Ferreira, a fourth-generation farmer known throughout his region as a pioneer of specialty coffee in Brazil, operates the 130-hectare Fazenda Passeio in the south of Minas Gerais. The steep slopes of the farm mean that his coffees are exclusively handpicked, an uncommon method in a country where mechanical harvesting is the standard. Adolfo favors this additional level of quality control for his coffees, and along with his dedication to environmental stewardship and equitable support for his workers, speaks to his trailblazing commitment to elevating Brazil specialty coffee.
Why we chose this coffee:
A very nice and delicate Brazil that highlights on the acidity and not as much driven by body - honey graham, steamed milk sweetness, honey, maple, lemon curd, cocoa powder, dried fruit, toffee, cranberry.
Drip Profile
Notes: Nutella Wafer, Dutch Chocolate Mousse, Dried Date
Overall: Very wonderful interpretation of this offering. Great clarity and sweetness for a Brazil offering, with really nice silky texture and a soft finish.
Espresso Profile
Notes: Fresh cherry, apple, hazelnut, milk chocolate
Overall: Round, sweet, and very balanced. Soft cherry and a rind like acidity balance a huge sweet roasted hazelnut and chocolate body and finish. Rich & silky mouthfeel.
