Sacuanjoche, named for the eye-catching national flower of Nicaragua, is a single-farmer, single-varietal offering grown by Alejandro Alvarez Baltodano. The variety, Java, is similarly impressive, with tall plants that bear bronze-tipped leaves and large seeds. Java has become well-regarded throughout Central America for its high cup quality and resistance to common diseases despite having a lower yield. Perhaps most notably, it showcases a unique flavor profile due to its genetic heritage stemming back to Ethiopian landraces that were transplanted to Indonesia and eventually made their way to the Americas.
Look for notes of pineapple, tamarind, and jasmine in this exquisite cup.
