Luisa Silas Pastora has been working in coffee for 65 years and runs her family farm, Finca Santa Rita, in Jinotega, Nicaragua. Luisa is a respected coffee producer, having transformed her operation to service specialty coffee. While she leads the farm's idea, vision, and management, Luisa's team carries out the farm activities, and her grandson, Oscar, helps her with farm management and buying inputs. The farm covers 60+ hectares, with 42 dedicated to growing and 18 for conservation. For the past six years, Luisa has worked with specialty coffee exporter Caravela Coffee, receiving guidance from the PECA team to improve her techniques. Luisa’s coffee production emphasizes quality through selective harvesting.
This offering features the Maragogype varietal, often referred to as "the elephant bean", which can be 2-3 times the size of other varietals. Their natural sweetness and complexity make for a winning combination with a natural processing style, creating a cup that is dynamic, juicy, and decadent.
